Since it hasn't been mentioned here yet, I feel like https://courses.learningmodular.com/courses/basic-concepts should be mentioned, along the Patch & Tweak book, both great resources for beginners I think.
That, and VCV of course, the tool where you can learn by doing... for free :-)
